Paleta Bar expanding Albuquerque – Albuquerque Business First

Albuquerque is about to get a bit sweeter.

The Paleta Bar, which bills itself as a fresh gourmet Mexican popsicle shop, is adding two more locations in Albuquerque.

The success of its first location, which opened in June 2017 at 2325 San Pedro NE, encouraged the store’s owners to open two more locations in Albuquerque, they said. Its first new shop, located at the Shops @ Montano shopping center at Coors Boulevard and Montano Road NW, had its soft opening Monday and will have its grand opening over the weekend. The Paleta Bar also will open a third location later this month at the Cottonwood Mall.

The Paleta Bar was founded by co-founders Claudius Dipo Alam, Joel Marquez and Juan Carlos Estala, all under 31.

The shop offers various paletas, Spanish for popsicles, with toppings and flavors. The shop focuses on fresh ingredients with no artificial flavorings, colorings or preservatives.

Alam said sales at the first location were OK, but a viral video with nearly 4 million views shot sales to nearly $100,000 monthly.

“Sales were going insane after the viral video,” Alam said.

Each space is about 1,200 square feet. Marquez said they would have liked to find a bigger spot, but that might have forced them to open just one location.

Alam said the goal is to eventually turn the business into a franchise model. The team has already fielded inquires in Houston, San Diego and Oklahoma City.

According to the New Mexico Restaurant Association, restaurants in the state generate $3.2 billion in annual sales and employ more than 85,000 New Mexicans.
